Pakistani-style mixed vegetables is a delicious, simple, and nutritious dish made with a blend of seasonal vegetables and aromatic spices.
Ingredients:
Vegetable (Chopped into Small Pieces) ):
- 1 cup cauliflower florets
- 1 medium potato
- 1 medium carrot
- half cup green peas
- half cup capsicum
- half cup green beans
- 1 medium tomato (finely chopped )
- 1 medium onion (finely chopped )
- 3 tablespoon oil or ghee
- 1 tablespoon cumin seeds
- 1 tablespoon ginger-garlic paste
- 1 tablespoon coriander powder
- half tablespoon turmeric powder
- 1 tablespoon red chili powder (adjust to taste )
- half tablespoon salt (adjust to taste )
- half tablespoon garam masala
- 1 green chili (sliced)
- 2 tablespoon fresh coriander leaves (for garnish )
Instructions:
Step 1: Prepare the Base
Heat oil or ghee in a pan on medium heat. Add cumin seeds and let them crackle for a few seconds. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook for 1 minute until fragrant. Add chopped tomatoes and cook until they soften and oil starts to separate.
Step 2: Add Spices
Add coriander powder, turmeric powder, red chili powder, and salt. Mix well. Cook for another 2-3 minutes until the masala is well-cooked.
Step 3: Add Vegetables
Add potatoes and carrots first (since they take longer to cook ). Stir well and cover for 5 minutes. Add cauliflower, green beans, and peas. Stir and cook for another 5 minutes. Add capsicum and green chili. Mix everything well. Cover and cook on low heat for about 10-12 minutes, stirring occasionally.
Step 4: Final Touch
Check if the vegetables are tender but not mushy. Add garam masala and mix well. Garnish with fresh coriander leaves.
- Serve hot with roti, paratha, naan, or plain rice.
- Pair with raita (yogurt sauce ) and salad for a complete meal.
