Aloo Gosht is a classic Pakistani dish made with tender meat and potatoes cooked in a rich, aromatic gravy. It pairs well with naan, roti, or plain rice.
Ingredients:
For the Curry:
- half kg (500 g) mutton or beef (bone-in for extra flavor )
- 3 medium potatoes, peeled and cut into halves or quarters
- 2 medium onions, finely chopped
- 2 medium tomatoes, chopped
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- half cup yogurt
- half cup cooking oil or ghee
- 2 cups water (adjust as needed )
- 1 tablespoon salt (or to taste )
- 1 tablespoon red chili powder
- half tablespoon turmeric powder
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- half tablespoon garam masala powder
- 1-2 green chilies, slit
- fresh coriander for garnish
Step 1: Heat oil & fry onions.
Heat oil in a pot on medium heat. Add chopped onions and sauté until golden brown.
Step 2: Add Meat & Spices:
Add meat, garlic paste, and ginger paste. Sauté for 5-7 minutes until the meat changes color. Add salt, red chili powder, turmeric, coriander powder, and cumin powder. Mix well.
Step 3: Add Tomatoes & Yogurt:
Add chopped tomatoes and cook until they soften. Mash them with a spoon. Add yogurt and cook for another 5 minutes until the oil separates.
Step 4: Cook the Meat:
Add 2 cups of water, cover, and let it simmer on low heat until the meat is tender. If using a pressure cooker, cook for about 25-30 minutes for mutton or 15 minutes for beef.
Step 5: Add Potatoes & Simmer:
Add the potatoes and let them cook in the curry for another 15 minutes until soft. If needed, add more water for a thinner gravy.
Garnish and Serve:
- Sprinkle garam masala and add green chilies. Stir well.
- Simmer for 2-3 minutes and turn off the heat.
- Garnish with fresh coriander and serve hot with naan or rice.
