Gobi Aloo is a classic dish made with cauliflower (gobi) and potatoes (aloo) cooked with aromatic spices. It is a simple yet flavorful dish that pairs well with roti, paratha, or rice.
Ingredients:
Vegetables:
- 2 cup cauliflower florets
- 2 medium potatoes, peeled and cubed
- 1 medium onion, finely chopped
- 2 medium tomatoes, finely chopped
- 2-3 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, finely chopped (optional)
- 1 tablespoon cumin seeds
- half tablespoon turmeric powder
- 1 tablespoon coriander powder
- half tablespoon red chili powder (adjust to taste )
- half tablespoon garam masala
- half tablespoon dry mango powder (amchur)
- salt to taste
- 2 tablespoon oil
- 2 tablespoon fresh coriander leaves, chopped (for garnish )
- 2 tablespoon water
Wash the cauliflower florets and soak them in salted hot water for 5 minutes to remove any impurities. Drain and set aside. Peel and chop the potatoes into small cubes.
Step 2: Sauté the Spices
Heat oil in a pan or kadhai over medium heat. Add cumin seeds and let them sputter. Add chopped onions and sauté until they turn golden brown. Add ginger, garlic, and green chilies. Sauté for another 30 seconds until the raw smell disappears.
Step 3: Cook the Tomatoes and Masala
Add chopped tomatoes and cook until they turn soft and mushy. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes until the masala releases oil.
Step 4: Add the Vegetables
Add the potatoes first, mix well, and cook for 2-3 minutes. Add the cauliflower florets and stir everything together. Cover and cook on low-medium heat for about 10-12 minutes, stirring occasionally. If needed, add 1-2 tablespoons of water to prevent sticking.
Step 5: Final Seasoning
Once the potatoes and cauliflowers are tender, add garam masala and dry mango powder. Mix well and cook for another 2 minutes. Turn off the heat and garnish with fresh coriander leaves.
- Serve hot with naan, paratha, or jeera rice.
- Pair it with yogurt or a side of pickle for extra flavor.
